Position Overview

We are seeking an experienced, passionate Chef de Cuisine who specializes in both Greek and Spanish cuisines. The ideal candidate will lead our kitchen team, design innovative menus, and ensure every dish reflects the authenticity and excellence our guests expect.

Key Responsibilities

  • Menu Development: Create and update seasonal à la carte and tasting menus featuring classic and modern Greek and Spanish dishes.
  • Recipe Standardization: Write clear, cost-effective recipes and portion guides to maintain consistency.
  • Culinary Leadership: Supervise, train, and mentor kitchen staff; establish daily prep lists, station assignments, and quality controls.
  • Technique Mastery: Apply advanced cooking methods (e.g., sous-vide, braising, grilling, fermentation, paella technique) to elevate flavors and textures.
  • Inventory & Cost Control: Manage ingredient orders, minimize waste, and optimize food cost percentages without compromising quality.
  • Quality & Safety: Enforce HACCP and local health regulations; maintain spotless kitchen sanitation and safety protocols.
  • Collaboration: Work closely with the management team on special events, private functions, and promotional initiatives.

Qualifications

  • Experience: Minimum 5 years as a lead or sous-chef in Mediterranean, Greek, or Spanish restaurants, hotel kitchens, or fine-dining establishments.
  • Culinary Expertise: Deep knowledge of traditional Greek (mezes, moussaka, souvlaki, seafood) and Spanish (tapas, paella, cocido, jamón ibérico) cuisines.
  • Technical Skills: Proficiency in a wide range of cooking techniques, knife skills, butchery, fish fabrication, and modern plating styles.
  • Language & Communication: Fluent in menu terminology and kitchen operations; strong verbal and written communication.
  • Leadership: Proven ability to inspire, organize, and maintain a high-performing team in a fast-paced environment.
  • Education: Culinary degree or equivalent professional certification preferred.
